Ki No Tou is an Old Tom Gin from Kyoto Distillery.
It is made using the distillery's standard Ki No Bi Dry Gin as its base which uses the following botanicals: juniper berry, orris, hinoki (Japanese cypress), yuzu, lemon, gyokuro (green tea), ginger, red shiso leaves, bamboo leaves, sansho pepper, and kinome (Japanese herb). The Dry Gin is then sweetened post-distillation with kokutou (black sugar) from the Okinawan island of Yonaguni. This sugar retains a higher mineral content than standard sugar.
